The whole berries fermented on wild yeast. A 16-month maturation in old oak barrels contributes with subtle wood flavors wonderfully contributes to the well-balanced overall impression. The tannins are present but already soft and well integrated despite his youth. An elegant Shiraz that promises very good aging potential.

The ultimate wine to go with lamb, preferably a slowly-cooked lamb shank or leg. It also goes surprisingly well with spicier dishes that often resist a (red) wine like Mediterranean couscous (with star anise and cumin) and stir-fries with (milder versions of) chili’s or jalapenos in it, or just anything with a strong peppery note. These spices will all be very nicely supported by the spiciness and pepper ness of the Shiraz.
